Ingredients
- 1 roll of puff pastry
- 3 tbsp cream cheese
- 2 tbsp lemon curd
- 50g flaked almonds
- 3 tbsp icing sugar, sifted
Instructions
- Pre heat your oven to 180°c and line a tray with greaseproof paper.
- Unroll the puff pastry and spread with the cream cheese, leaving a 1cm border round the edges. Next spread the lemon curd on top, followed by an even sprinkling of half the almonds.
- Starting with the longest edge, roll into a long tight log. Cut into ten even pieces and lay on the baking trays allowing plenty of room to spread. Bake for 25 minutes and allow to cool.
- Whilst the pastries are cooling prepare the glaze by mixing the icing sugar with 2 tbsp water. Drizzle over the pastries and top with the remaining almonds.
- Best eaten on the same day.
