Ingredients
- 2 ciabatta rolls (or similar)
- 4 eggs
- 100g grated cheese of your choice (I used cheddar)
- 50 ml double cream (or whole milk)
- Salt and pepper
- Chopped parsley
- 4 rashers of bacon, chopped and cooked
Instructions
- Pre heat the oven to 170ºc and prepare an oven tray by lining with greaseproof paper
- In a small bowl combine the eggs, cheese, bacon, salt, pepper, cream and parsley. Mix well and put to one side.
- Cut a long rectangle in the middle of each roll and remove to reveal the inside of the bread. Hollow out the centre of each roll and make it as deep as you can without breaking the outer edge.
- Transfer the rolls to your oven tray and spoon the filling into the centre of each roll. You want to fill them almost to the top as they will rise slightly when cooking.
- Bake for 25 minutes.
- Serve immediately - enjoy!
