Ingredients
- 2 x rolls of Pastry
- 6 tbsp Mince Pie Nut Butter (or mix 3 tbsp peanut butter with 3 tbsp mincemeat)
- Egg yolk to glaze
Optional: Demerera sugar for sprinkling
Instructions
- Pre heat your oven to 200°c and line two baking trays with greaseproof paper.
- Roll out your puff pastry and cut out 12 gingerbread man shapes (or more depending on the size of your cookie cutter)
- Lay half of your gingerbread men shapes on the prepared trays, leaving at least an inch between, and top each one with 1 tbsp Minch pie nut butter.
- Brush the outer edges with egg wash and top with the remaining shapes. Press down round the edges and then crimp sealed with a fork.
- Brush the tops with egg wash and sprinkle with Demerara if using.
- Bake for 16-18 minutes, or until golden and risen.
- Enjoy warm and preferably on the same day as baking!
