Ingredients
- One roll of Puff Pastry
- 50g golden caster sugar
- 2 tsp cinnamon
- 4 tbsp butter
- Egg yolk to glaze
Instructions
- Pre heat your oven to 200°c. I used the little loaf cases from Lakeland that were around £3.99 for 12. Handy to stock up on as they are great for mini loaf cakes, and you can find similar ones on Amazon. (for alternatives see below)
- Unroll your puff pastry and cut into four even strips. I cut mine slightly narrower than the base of my mini loaf cases to ensure they had room to puff up and expand during baking.
- Mix the cinnamon and sugar together in a small bowl.
- Spread a tbsp of butter evenly on each strip, followed by a generous sprinkling of cinnamon sugar. Fold in half and press down. Cut 7-8 even strips almost all the way to the top, leaving a centimetre strip uncut along the top. Twist each strip all the way up, then using the uncut end, roll into a neat log, securing with the loose end on the bottom.
- Place in the loaf case and brush with egg yolk.
- Sprinkle a little sugar on the top of each one and bake for 20-25 minutes, or until golden and cooked through . . . Enjoy!
Where do I find mini loaf cases?
I found these in my local Lakeland store in the UK but Amazon have lots of variations of them if you don't have a Lakeland nearby. I think these would work in a mini loaf pan too if you have one, but also think they would work with no case at all as long as you lay them on a baking tray with the sealed side on the base to give it the best chance of holding it's shape during baking. I haven't tried baking them with no case myself, but let me know how they turn out if you give it a go.
