Ingredients
- 190g butter, room temp
- 190g golden caster sugar
- 190g self raising flour
- 3 eggs
- 25g poppy seeds
- 3 lemons, zested and juiced
- 75g icing sugar, sifted
- Pinch of salt
Instructions
- Pre heat your air fryer to 160° and get 7 mini loaf cases ready on the air fryer tray.
- In a medium bowl combine all the ingredients except for the icing sugar and lemon juice. Mix until everything is light and fluffy and no flour remains.
- Divide evenly between your 7 loaf cases until each one is 3/4 full. Bake for 30 minutes, testing with a cocktail stick to make sure it comes out clean. If not, keep checking every 2-3 minutes until it does.
- Prepare the icing by adding the lemon juice a tablespoon at a time until you have a drizzle consistency. Using the cocktail stick, pierce holes in the sponges and drizzle over the icing. Top with lemon zest and enjoy!
- Keep in an airtight container for 2- days for maximum freshness.
