Ingredients
- 2 cod fillets, diced, and 250g king prawns (although you can use a seafood combo of your choice)
- 230ml light beer
- 1 tsp mixed herbs
- Salt and pepper
- 1 egg
- 90g plain flour mixed with 1 tsp baking powder
- 30g plain flour, in a shallow dish
Oil for frying
For the garlic mayo mix 5 tbsp mayonnaise with 3 cloves crushed garlic
Optional: lemon and fresh herbs to serve
Instructions
- Pat your diced fish and prawns dry between sheets of paper towel.
- In a small bowl, mix the egg and beer to combine.
- In a medium bowl, mix the plain flour and baking powder with salt, pepper and dried herbs of your choice. Pour in the egg mix and stir to combine. Don’t over mix, you want a smooth batter but don't worry if there are lumps.
- Pre heat at least 2-3 inches of vegetable oil in either a deep pan or deep fat fryer to 180ºc.
- Take each piece of seafood and coat in the flour, ensure it's completely coated. Lower into the batter, again, ensuring that each piece is fully covered in the mixture. Carefully lower into the hot oil and fry for 3 minutes.
- Remove carefully. Place on a plate lined with paper towel to remove excess oil and serve straight away so it’s nice and crispy. A squeeze of lemon and a handful of parsley finishes it off nicely, and it's even better served with buttery samphire new potatoes!
- If using the garlic mayo, add 4-5 tablespoons to a small bowl and stir through 2 minced cloves of garlic.
