Ingredients
- 2 egg whites
- 160g desiccated coconut
- 1 tbsp sugar
- 50g melted chocolate (I used Caramilk)
- 100g Mini Eggs
Instructions
- Pre heat your oven to 150ºc and grease a small cupcake pan (I used the Masterclass nine hole tray which was the perfect size) You can also use cupcake cases but providing you have greased your pan they should come out easily.
- In a small bowl combine the egg white, sugar and a small pinch of salt. Mix well and then add the desiccated coconut. Stir well to ensure everything is well coated and no dry coconut remains.
- Put two heaped tbsp of the mix into each cavity in the cupcake tray, pushing down in the centre to create a nest shape. I use the grinder from a small pestle and mortar but feel free to use whatever works best for the size of your nests.
- Bake them in the oven for 20-25 minutes and leave to cool for 5-10 minutes before gently removing them from the tray. Allow to cool completely.
- Melt your chocolate either in short bursts in the microwave or over a pan of simmering water in a heatproof bowl. Pipe or spoon the melted chocolate into the nests and pile the eggs on top. It’s as easy as that!
