Ingredients
- 200g dark chocolate, roughly chopped
- 200g milk chocolate, roughly chopped
- 125g golden syrup
- 125g butter
- 150g digestive biscuits, crushed with a rolling pin
- 100g mini marshmallows
- 100g raisins
- 300g Mini Eggs, some lightly crushed, some whole
Instructions
- Line a 20cm tin with greaseproof paper and put to one side.
- In a medium pan gently melt the butter and golden syrup. Once it starts to bubble remove from the heat and stir in the dark and milk chocolate. Mix until smooth and all the chocolate has melted.
- In a large bowl add the crushed digestives, raisins, marshmallows, 2/3 of the crushed Mini eggs and mix well with a spoon. Pour over the melted chocolate mixture and stir until everything is combined and coated in chocolate.
- Pour in to the lined tray, smoothing the top down with the back of a spoon. Top with the remaining Mini Eggs and leave to chill and set in the fridge for 4-5 hours or overnight.
- Cut into 16 squares and keep in an airtight tub in the fridge for up to 1-2 weeks.

Rocky road is a no-bake dessert made with a mixture of crushed biscuits, melted chocolate, marshmallows, and sometimes nuts or dried fruit (int his recipe I have used raisins). The ingredients are combined and then chilled in the refrigerator until set. Once set, the cake is typically sliced into squares or bars for serving and it's a great way of using up leftover chocolate, biscuits and other treats. The beauty of this recipe is you can mix the add-in ingredients depending on what you have in the cupboards and experiment with chocolate flavours.

Rocky road can typically be stored in an airtight container in the fridge for up to 1-2 weeks. Proper storage is key to maintaining its freshness and texture and to prevent the marshmallows or biscuits becoming too soft.
