Ingredients
- 2 tbsp olive oil
- 1 red onion, diced
- 500g mince beef
- Packet of taco seasoning (I used Old El Paso)
- 400g salsa (fresh or jarred)
- 125ml water
- One can of black beans, rinsed and drained
- 100g canned sweetcorn (you can also use diced peppers)
- 275g tortilla chips, such as Doritos
- A tub of nacho cheese sauce
- 150g shredded mozzarella
- 150g cheddar, grated
- To top:
- 1 avocado, chopped
- Finely chopped red chilli
- Fresh coriander
- Lime wedges
Instructions
- Start by lining a large oven proof tray with greaseproof paper and pre heat the oven to 200ºc
- Heat the olive oil in a pan and add the chopped red onion. Cook gently until softened. Add the mince, breaking it down in the pan with awooden spatula and brown for 5 minutes.
- Add the taco seasoning and mix to coat the mince evenly, then add the water, the peppers or corn, the black beans and the salsa. Simmer for 10-15 minutes.
- Arrange the tortilla chips on the baking tray and top with half of the nacho cheese, half the mozzarella and half the cheddar. Spoon over the beef sauce, followed by the remaining half of the cheeses. Bake for 10-15 minutes until the cheese is bubbling and golden.
- Remove from the oven and scatter over the avocado, lime wedges, coriander and chilli.
