Ingredients
- 140g plain flour
- 200ml whole milk topped up with 100ml water
- 30g butter, melted (plus extra for greasing the pan)
- 2 medium eggs
Toppings: I have used maple syrup and grated white chocolate over to give the illusion of parmesan. Some other ideas are brown butter, sugar and lemon juice, chopped toasted nuts, berries and honey. Make it your own and have fun experimenting!
Instructions
- Start by sieving your flour into a bowl or batter bowl with a pinch of salt. Make a well in the flour and add the eggs and the milk + water mix. Whisk slowly, incorporating the flour from the sides as you go. You should be left with a smooth batter. Leave to stand for 30 minutes.
- After 30 minutes, melt the butter, and pour into the mixture. Whisk well until you have a glossy and smooth batter.
- Heat a pan / crepe pan over a medium heat and once it's hot, brush with a little butter. Add a ladle of batter to the pan, swirling round to cover the surface. Allow to cook for around 3 minutes, before flipping and finishing off the remaining side for a further minute.
- If your are making several, heat an oven to the lowest setting and layer them up between sheets of greaseproof paper to keep them warm.
- Once your crepes are ready, take each one and roll into a long log shape. Cut through width ways into pieces that are around 0.5cm in width. Unravel each piece and you will have a long strip of 'pasta'. Repeat with the remaining crepes, toss in sugar and serve onto plates. Top with maple syrup and a sprinkle of white chocolate 'parmesan' for a fun and delicious Pancake Day treat!
