Ingredients
- 60g plain flour
- 85mls milk (I used full fat)
- 1 egg
- 30g melted butter
- 1 tsp vanilla extract
- 35g pumpkin puree (canned or fresh)
- 1.5 tsp baking powder
- 1 tbsp caster sugar
- 1 tsp pumpkin spice mix (you can find my recipe for this here)
- 1/4 tsp salt
Instructions
- In a medium sized mixing bowl beat the egg and stir in th milk, melted butter , vanilla and pumpkin puree until smooth.
- Sift in the flour along with the baking powder, sugar, pumpkin spice and salt. Don't over mix, a few small lumps is fine.
- Heat your waffle iron, brush with a little oil or melted butter and spoon in enough waffle batter to just cover the base. The mixture will swell as it cooks so don't be tempted to overfill. I find mine to be ready in 2-3 minutes but waffle appliances may vary. If you are making in batches then keep them warm in a low oven. Serve with crushed pecans and maple syrup . . . or feel free to get creative!

Can I use canned or fresh?
Both would work well, my only advice would be that depending on the variety / brand you use, the water content can vary. If your pumpkin seems quite watery simply press between sheets of paper towel to remove any excess moisture that may dilute the batter.

Canned pumpkin tends to have a smoother, more concentrated flavour with a slightly sweeter and milder taste compared to fresh pumpkin. Fresh pumpkin, when cooked, often has a more nuanced, earthy flavour with a touch of natural sweetness, but it can also be more watery or fibrous depending on the variety and ripeness. The benefits of canned pumpkin are consistency every time, and time saving in a recipe. You can also canned pumpkin all year round, where as fresh pumpkin is seasonal. At the end of the day it comes down to personal preference., there is no right or wrong.
