Ingredients
- 200g room temperature butter
- 210g light brown sugar
- 80ml maple syrup
- Chai Spice Mix: 2 tsp ginger, 1 tbsp cinnamon, 1 tsp ground cardamom, 1/4 tsp mixed spice, 1/4 tsp black pepper
- 2 eggs
- 240g plain flour
- 1 tsp baking powder
- 1/4 bicarbonate of soda
- 1 tsp vanilla bean paste
- 225g Greek Yoghurt
Instructions
- Preheat your oven to 170c and brush your Bundt pan with butter, then dust with flour, shaking out the excess
- Beat the butter, light brown sugar and maple syrup for 4-5 minutes, until light and fluffy. Add your eggs one at a time, followed by the Chai spice mix.
- Add the baking powder, bicarbonate of soda and salt to the flour and mix. Add half of this to the butter mix and stir. Add the Greek yoghurt and vanilla bean paste, followed by the remaining flour and make sure everything is fully incorporated.
- Add to the prepared pan and bake for 40-45 minutes, or until a skewer comes out clean.
- Leave to cool for 15 minutes before attempting to turn and release the cake from the pan.
- Once cooled, drizzle over caramel sauce for a super indulgent treat, or simply enjoy as it is!
