Ingredients
- 300g plain flour (or half wholemeal / all wholemeal)
- 1 tbsp ground cinnamon
- 220g unsalted butter
- 1/2 tsp salt
- 120ml cold water
- 2 tsp vanilla extract
- 3 tbsp melted butter
- 75g golden caster sugar mixed with 1 tsp ground cinnamon
Strawberries and milk to serve
Instructions
- Pre heat your oven to 170ºc and line two trays with greaseproof paper.
- Add the flour, salt and butter to a food processor and blend until it starts to clump together. Reduce the speed and slowly add the water and maple syrup until it comes together to form a smooth dough. Lightly flour a work surface and turn out the dough, dividing it in to two equal pieces.
- Put one half to one side and cover the remaining piece with a sheet of greaseproof paper. Roll the dough out very thin, around 0.3-0.4mm and brush with the melted butter. Sprinkle over the cinnamon sugar ensuring it is evenly covered.
- If you are making heart shaped cereal, begin cutting out the hearts, keeping them as close together as possible to get the most out of the dough. (I don't recommend re-rolling due to the addition of butter and sugar) If you are making cinnamon squares, use a knife or pizza cutter to cut the dough lengthways into 1cm strips, then cut again widthways. Transfer your cereal shapes to a baking tray and bake for 10 minutes. Allow to cool and transfer to an airtight jar to store for 4-5 days.
- Serves with milk and fresh fruit, or even enjoy dry as a tasty snack!
Do I have to make this heart shaped?
Not at all, in fact cutting into strips, then into squares is super quick and easy and makes a great Cinnamon Squares cereal dupe!
How can I make this healthier?
As Valentines Day is a one off, I made this with white white flour, but if you would like to make this as a more regular daily cereal, feel free to reduce the sugar and swap the flour to something healthier such as wholemeal or even spelt.
